How to accomplish "Bánh Căn" - Vietnamese Delicous Cake

In the bustling ambience of a modern city, being sheltered from various kinds of Vietnamese cuisine, there's a kind of baked cake called banh can of Nha Trang City which has been known for a long time as a rustic dish for the poor. However, this simple but delicious cake made from rice and egg has recently become a favorite food in buffets at luxury hotels. In Nha Trang City in Khanh Hoa Province people can easily capture an image of a seller sitting next to a small earthen oven in the early morning making banh can. Banh can in Nha Trang has a special flavor compared to other regions thanks to its flour which is made from a mixture of ground grain rice and cold rice. The flour is poured into a mold to bake with eggs to make the cake soft and crisp. Banh can is best with a fish sauce accompanied with sliced unripe mango or mackerel. It costs just thousands of Vietnam dong. Eating banh can in the early morning instead of pho (Vietnamese noodles) is popular with tourists from everywhere visiting Nha Trang. The feeling when sitting next to a warm oven and enjoying the sweet smell of a freshly baked cake seems to be special to some people. And it is more wonderful to put a hot, crisp cake dipped in fish sauce into the mouth. People who visit Nha Trang should pass by Le Hong Phong, Vo Tru, Van Don or Nguyen Thien Thuat streets or Dam Market to taste this rustic and special dish of the coastal city.

Eat Clean with Yummy Cake-Like Organic Manna Bread

hotandhealthyliving.com Anything sweet (or even remotely dessert-like) always scores big points with me in the taste department. While I could easily polish off a huge piece of cake any day (somehow I muster up the control not to do this), its definitely a challenge to find healthy sweets that align with a whole foods diet. Every time I grocery shop, I keep my eyes peeled for the latest and greatest truly healthy sweet find. Unhappily, I rarely come across a convenience food that meets my ridiculously strict whole foods diet nutrition criteria. Manna bread, I am overjoyed to say, exceeds even my requirements for a sweet find. Lets start with taste. Manna bread is a muffin-y, cake-like tasting bread that is sweet, moist and chewy all at once. Its also extremely satisfying. If Im having a sweet craving all I need to do is slice some manna bread, spread it with some raw almond butter and put a few dried apples on top. Its also amazing with raw honey and a bit of hardened (butter-like) extra virgin coconut oil on top (I especially like Barleans brand of coconut oil). If Im really needing something totally decadent, Ill use manna bread as the base for a chocolaty dessert; simply cut a slice of manna bread, spread a thin layer of peanut butter on top, place a few mini dark chocolate chips (such as Ghirardelli 60% Cacao Bittersweet Chocolate Chips) on top and pop the whole thing in the microwave to melt the chocolate and heat the manna bread. Top it with one heaping tablespoon ...

Wedding Cake Recipes Sweeter Than Sweet - Cheap Wedding Cake Mixes & Tasty Ingredient Ideas

!±8± Wedding Cake Recipes Sweeter Than Sweet - Cheap Wedding Cake Mixes & Tasty Ingredient Ideas

How important is the wedding cake. I am afraid I can't answer this, however if we stay with tradition then it's essential to have a wedding cake if it is a perfect wedding you desire. And isn't this what every bride-to-be wants "perfection." If you've asked this question because you're not fond of the ingredients included in a traditional wedding cake then you don't have to have them. Wedding cakes can be tailor designed around your wants with ingredients and decoration of your own personal choosing.

For the perfect wedding add a wedding cake to your wedding to-do-list.

Preferences for wedding cakes will differ, as they do with wedding dresses, wedding music, wedding locations and wedding guests because people have different likes and dislikes. Nonetheless in most cases the bride and groom always get what they want. The cake is the main focus of the wedding reception making a fabulous centerpiece. Choosing the right wedding cake is important for guests that have a sweet tooth because their focus will be on the cake at all times.

There is more to choosing a wedding cake than just pointing to a picture and agreeing that is what you want. Things need to be considered that are often overlooked like the color of the icing and cake design to match your wedding gown or theme. The ingredients used to bake the cake are also very important indeed; after all we have a lot of people to please.

Make light work of choosing your wedding cake and follow the tips listed below. With this daunting prospect in mind, let us make your wedding cake planning less of a hassle.

First of all you need to be aware there is more than just taste and color of your cake to consider. Planning a wedding on a budget can cause issues regarding the cake but you shouldn't let this worry you. Cheap is just as tasty as expensive, and just as pretty too.

Before planning gets underway sit down with your partner and ask yourselves.

How much money your prepared to spend on your wedding cake, or if you`re counting the pennies then what type of cake you can afford?

The cake is to feed the mouths of many so plan the size of the cake around how many guests you're likely to invite.
Doing the above will save you money. Too much cake is a waste if you go for big. The type of wedding cake you can realistically have should be determined on the pointers mentioned above.

Choosing a wedding cake should have you think "shape, color, ingredients and decoration.

A great place to start for ideas on cake appearance is to browse pictures in magazines, books and wedding cake websites. Visit the bakery and see the real thing. This will give you the opportunity to talk about your desired cake.

It helps if you know the reason for wanting a wedding cake. Is it to use as a piece of eye candy. If so concentrate on design and prettiness.

If it's for hundreds of guests to feed on? Then size of the cake is important.

Do you want the wedding cake to match your color scheme, if so speak with the baker in advance so he/she can advise on what will work and ideally suited to your request?

In the world of wedding cakes decorations come in vast variety. Cake accessories like ribbons, flowers, wedding cake toppers, edible rosebuds to candles are a few to mention.

Most "essential" in any wedding cake is the flavor. You can have the loveliest creation made but what's the point of pretty without taste, it doesn't' make sense and neither does it make good eating. Traditionally wedding cake filling is fruit. But if you prefer chocolate as your selected flavor then there's no reason why you and your guests can't have chocolate.

Out with tradition to make way for new scrumptious wedding cake flavors eaten at weddings. The white wedding cake with white butter-cream icing is not as common as it was judging by modern day weddings.

Remember this is your day and your cake.

Cheesecake goes down well. It's an ideal choice for the not so grand wedding, but is fabulously appropriate and cheap for a small wedding. Meringues, baked Alaska, fruitcakes, chocolate cake, and angel food cake are also increasingly popular.

You never see a guest turn their nose up at carrot cake, is it because it's moist and spicy? Carrot cake is usually based on oil instead of butter. If you're not a lover of raisins you don't have to add them. Swap with pecans or walnuts. If you're doing your own decorating then cream over with white icing adding pecans here and there with other edible cake decorations.

Pumpkin cake another favored sweet confectionery. Decorate pumpkin cake with cranberry and greenery. At its best when iced with cranberry butter cream.

Chocolate-Raspberry - a yummy chocolate cake with a raspberry filling. Icing is chocolate butter cream. The cherry on the cake for the chocolate-raspberry (excuse the pun) is to pipe cream with chocolate curls and decorate with edible floral cake accessories. Pressed and crystallized flowers are fabulous cake decorations.

Do you think your guests will fancy a slice of coconut cream pound cake, if so do them a favor and serve up this cake because a little of what you fancy does you good.

Coconut Cream Pound Cake Recipe

Ingredients

225 g softened butter
224 g softened cream cheese
600 g white sugar
Half a dozen eggs
5 ml coconut extract
375 g all-purpose flour
2 g baking powder
150 g coconut flakes
Baking Instructions

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.

Cream the butter and cream cheese until thoroughly blended. Add sugar and whisk to light fluffy texture. Add 1 egg at a time and whisk followed by coconut extract. Pour flour and baking powder in until lightly moistened, then the coconut. Mix is ready for the baking pan.

Bake for 1 hour and 20 minutes. Allow to cool for 10 minutes before moving.

Another cake simple to make and goes down well with wedding guest and their gullets to is the (Easy Light Fruitcake.)

Ingredients
455 g candied cherries, halved
5 candied pineapple rings, finely minced
870 g golden raisins
360 g candied mixed fruit peel
170 g almonds
125 g all-purpose flour
455 g softened butter or margarine
400 g white sugar
Half a dozen eggs
5 ml vanilla extract
60 ml orange juice
625 g all-purpose flour
9 g baking powder
3 g salt
6 split almonds
Baking Instructions

1. Preheat oven to 275 degrees F (135 degrees C). Line the bottom and sides of two greased 9 x 5 x 3 inch loaf pans, and 1 round 4 1/2 inch x 3 inch deep pan with brown paper. Grease the paper.

2. Mix cherries, minced pineapple pieces, raisins, mixed peel, 1 cup pecans, and 1 cup flour in a basin. Blend all ingredients until fully coated with flour and stand to aside

3. Using a separate bowl, cream the butter/margarine and sugar. Whisk in 1 egg at a time. Add orange juice and vanilla and stir. Take 5 cups flour, your baking powder and salt and add to creamy mixture. Add floured fruit and nuts. Carefully pour mix into baking pans. Fill each pan 3/4 full. Add split almonds over the top.

4. Usual baking time 3 hours. Pierce cake with a toothpick and if done the toothpick comes out clean. If the top of your cake darkens before the sides cover with foil.

My suggestion: plain sponge. Nearly every cake base is sponge mix. If a person says they don't like a particular cake, it means they're not fond of certain ingredients used to fancy up and flavor. Keeping it plain allowing your guest to choose their own fillings, is the key. Fill glass bowls with a variety of flavored fillings (chocolate sauce, custard, jelly, and butter cream, raisins, mixed fruit, syrup, treacle and different flavored jams and fruit sauces? Do this and your guests won't have to wait for you to turn your back before spitting out cake chosen by you.

A Low-Fat Diet to Lose Weight Fast

!±8± A Low-Fat Diet to Lose Weight Fast

It is no mystery that foods that are high in fats are also packed with calories, and those are just the kind of foods that you need to avoid, if you want to lose weight fast. Today, it is a well-known general principle that weight loss involves burning more calories than you are consuming, and that principle is best applied with a low-fat diet.

Going Low-Fat and Healthy

Before embarking on a low-fat diet, it is important to know a couple of things. Firstly, just because a food item has less fat does not necessarily mean that it is healthy and will help you lose weight quickly. Sugar, for instance, has little fat, but is packed with calories, and a sugar-intensive diet can spell disaster for someone looking to get slim or maintain their weight.

The best strategy is to choose those low-fat foods that have very good overall nutritional value and a low-calorie density. Secondly, all fats are not evil. Some amount of fat is essential for the body, and the healthy fats are Omega 3 fatty acids and unsaturated fats. These help control cholesterol levels and prevent heart disease. As a rule of thumb, 30% of one's entire calorie consumption should be in fats, and most of these fat calories should come from the healthy fats mentioned above. Omega 3 is found in some varieties of fish, such as salmon, fresh tuna and sardines, as well as certain vegetable oils and plant foods. Unsaturated fats are mainly found in healthy vegetable oils like rapeseed oil, olive oil, corn oil and sunflower oil, as well as various nuts and fruits.

The Food Items to Avoid

In a low-fat diet some of the popular food items to avoid are whole milk, sweet goodies such as ice-creams (unless they are low-fat ice-creams), chocolates, cakes and biscuits, chips, fried or roasted potatoes, coconut, pastries, croissants, white breads, refined-flour based pancakes and pastas, butter, duck meat, meat pies and most cream and hard cheeses. A typical modern kitchen is usually packed with some, if not all of these food items. Most of them serve the purpose of snacks or quick bites. If your kitchen is one of those, it might just be a good idea to clear it out, and replace these high-fat foods with healthy, fat free ones.

Healthy, Low-Fat Food Items

A healthy, diet with moderate amount of fat is one that has variety and is practical enough to be sustained over a long period of time. After all, your slimming goals are not just for the coming season! Anyway, here are some nutritious, low-fat food items: skimmed milk, egg whites, low-fat yogurt, unsweetened fruit juice, lean meats, fresh and frozen vegetables and fruits, whole-wheat breads, whole-grain pasta and rice, high fiber breakfast cereals, walnuts, baked potatoes, dried fruits, beans, legumes and pulses, and porridge oats. This is certainly not a complicated list, even though it has a lot of variety, and most of these food items can be found fairly cheaply everywhere. However, while availability of healthy, low-fat foods may not be a problem, discipline will probably be the biggest challenge for people looking to lose weight fast.

It is important to keep in mind that weight loss is not the only benefit of a diet-plan consisting of these food items. There are loads of other health benefits associated with a healthy diet, including higher energy levels, reduced risk of cholesterol and heart problems, and even reduced risk of cancer.

Johnny Cakes

!±8± Johnny Cakes

Belizean food is easy to prepare, physically filling and delightfully delicious.  How about a dish of Johnny Cakes - a cross between what the American people traditionally or culturally know as biscuits and/or pancakes and traditionally a favored  food item breakfast dish in Belize.    However, Johnny Cakes are also, for many people, a standard, even a favorite bread that is consumed during lunch and dinner meals.  They are excellent with refried beans, cheese that is melted, crumbled or sliced.   A cultural Belizean food indeed; seldom is a meal eaten in a Belizean home without Johnny Cakes!

JOHNNY CAKES

2 lbs. Flour 1/4 lb. Shortening 4 tsp. Baking powder 2 tsp. Salt Cream from 1 coconut, or 1 tin Coconut Cream (8 oz.)

Method: Place flour in mixing bowl and add all dry ingredients. Work in shortening with fingers. Gradually add coconut cream and mix until dough handle easily without being too sticky, or dry. If too sticky, add a bit more flour. Knead until smooth. Cut into desired size (golf ball size works well) and shape into a ball. Let rest about 10 minutes, then flatten to about 1/2" thickness onto baking sheet. Prick top with fork four or five times.

Bake in preheated oven at 450 degrees F. until golden brown, or about 15 minutes. Once cooked split open and butter while hot.

Johnny Cakes are also good for when one has the munchies, pop one in the microwave or eat it cold, like bread and butter spread a bit of jam, jelly or your favorite fruit preserve on top. How delicious!

Lobster Pancakes with Chef Cliff Ostrowski at China Grill, Hard Rock Hotel Chicago

Pancakes don't necessarily have to mean breakfast, and in Chicago, one restaurant likes to stuff them with everything from fresh lobster to wild mushrooms. We visit Chef Cliff Ostrowski at China Grill Restaurant in Chicago's Hard Rock Hotel to taste test a delish crepe-inspired dish. Tip: Pair this dish with a crisp Riesling or Chardonnay—look for wine with a slightly sweet profile Tip: Cast-iron pan best for cooking crepes—conducts heat evenly and well Tip: Melted butter in the batter keeps crepe from sticking to the pan Tip: To minimize breakage, let crepes cool before adding the filling Tip: For less spice, de-seed the jalapeño before sautéing Trick: Reduce wine (and other liquids) down by half Trick: If you don't have a cast-iron skillet, a non-stick pan will work Trick: Coat pan with non-stick spray—any variety will do Trick: Use a household kitchen knife—not a spatula—to loosen crepe from skillet Trick: Cut rolled crepe on a bias for a pretty presentation Technique: To get the most flavor and sweetness out of the meat, cook lobster in the shell Technique: Whisk in milk as needed until batter has a thin, smooth consistency Technique: Add melted butter at the end so that it doesn't separate Technique: Pour crepe batter and twirl pan to evenly coat the bottom Lobster Pancakes with Wild Mushrooms, Red Chili, Scallions & Coconut Milk by Chef Cliff Ostrowski Makes 4 servings INGREDIENTS: Pancake filling: 1 lb. sliced domestic and shiitake mushrooms 8 oz. freshly chopped ...
